Fruit of the Month: Dried Fruit

January’s  fruit of the month is…. dried fruit!

Drying fruit preserves many of the nutrients and prolongs the life of the fruit, but it is important to remember that one serving of dried fruit is half the size of the same fresh fruit.

Veggie of the Month: Tubers

January’s veggie is……Tubers!

Tubers are root vegetables such as yucca root, jicama, sunchoke, taro root, and water chestnut.  Because these vegetables are grown underneath the ground they are able to absorb high amounts of nutrients and minerals from the soil. Tubers are generally high in fiber and vitamin c, and low on fat.
