Every month the CDC highlights a fruit and vegetable that should be in a healthy diet. The vegetables of the month for March are leeks and green onions (also known as scallions). Green onions are immature onions used often in Asian cuisine. Leeks look very similar to green onions but are much larger. Both leeks and green onions are low in calories and high in vitamin A. If you are looking to add fiber to your diet, choose green onions over leeks.
