Every month the CDC highlights a fruit and vegetable that should be in a healthy diet. April Fools! This month's vegetable is actually a fruit – the tomatillo. A tomatillo looks like a small green or yellow tomato wrapped in a brown husk. Tomatillos are popular in Mexican and Tex-Mex cuisine and are available year round in the supermarket. You can even find them canned, but we know fresh is best! Tomatillos are a rich in vitamins C, lycopene, potassium, and folate, and just like tomatoes they are known to have anti-cancer properties.
