Every month the CDC highlights a fruit and vegetable that should be in a healthy diet. January's veggie is Tubers. Tubers are root vegetables such as yucca root, jicama, sunchoke, taro root, and water chestnut. Because these vegetables are grown underneath the ground they are able to absorb high amounts of nutrients and minerals from the soil. Tubers are generally high in fiber and vitamin c, and low on fat.
